The macarons cookies can be very "friendly" for people with Lactose intolerance or gluten sensitivity, provided that the ganache or filling inside is dairy and gluten free. (Beware that the macarons are not vegan friendly, because the shells must contains egg whites).
I'm from Israel, Here, all the food that have no dairy or meat / chicken ingredients, is called "pareve". This post was originally about "parve desserts", but in this english version, i'll make it shorter and refer only to the gluten and dairy free issues.
If you want to make a dessert for people with lactose intolerance or celiac, macarons making is the perfect solution. Of course, most of the common ganaches and fiilling has dairy ingredients inside, but there are a lot of alternative dairy free fillings. Just remember that the gluten free ingredients are not necessarily dairy free and vice versa.
So which "pareve" ganaches or gluten free ganaches / fillings can we add to the macarons?
The easy way: you can add prepared spread in the macarons like jams, lotus spread, peanuts butter, carob spread or any spread you wish. try to put spread that is not too sweet, because the macaron's shells are already sweet.
A ganache with no dairy products can be made with dark chocolate and coconut cream instead of the dairy cream. you can stir the pareve ganache also with mashed fruits. Mashed blueberries and dark chocolate ganache is a great combination, it's both gluten and dairy free.
You can also add some fruits chunks into the filling, but then you need to eat the macarons at the same day you prepare it, ’cause the fruit's moisture can ruin the macarons.
Sugar free confiture or jam is a great idea for dairy and gluten free filling.
another idea is applesause and biscuits macarons. Ingredients: Applesause and biscuits crumbs.
Instructions: For each one table spoon of applesauce, use two tablespoons of biscuits crumbs. mix tne ingredients together for at least one minute until it well combined.

So.. even if the macarons are pareve, they'll still be the sexiest cookies in the dessert table. Consider making them if you need to make a parve or gluten free dessert .
