Recipes- filling and ganache

The macarons shells gives the cookies the special melting texture, but the ganache / filling inside bring the tatste into the macaron.

There's the easy way – you can sprinkle inside the macaron purchased spread filling like jam, hazelnut spread, peanut butter or any spread you wish.

along with it, you can make your own special filling or ganache.

Buttercream

Ingredients:

200g softened butter
21/2 cup powdered sugar
4tbs milk
1ts vanilla extract / flavoured extract
Instructions:
Beat butter in an electric mixer for 2 minutes
Gradually add the powdered sugar
When the sugar and butter are incorporated, add milk and vanilla extract and beat until well combined.


The filling is ready for drizzling onto the macarons.

 You can beat the buttercream with any flavoured extract / flavored puree / syrup, for making it
flavoured buttercream. for example – for pistachio filling, just add 1 or 2 tablespoon of pistachio paste.

Classic chocolate ganache

Ingredients:

75ml heavy cream

100g dark chocolate

50g butter (optional)
Instructions:

Bring cream in a small pot to a boil.

Remove from heat and pour the chocolate inside, mixing until the batter is smooth.

Let it rest for a few hours in the refrigerator, then drizzle onto macaron.
If preparing ganache with butter:

Melt chocolate in a double-boiler on medium-low heat, with butter and cream until they melt, and then mix. Chill in the refrigerator before adding to macaron.

You can substitute any other type of chocolate.

Just do not make the filling overly sweet because the macaron shell is already sweet …

Instant pudding filling

Ingredients:
80g instant pudding powder

200ml heavy cream
50g room temperture butter

optional –

any flavoured syrup / puree / extract for flavoured pudding
instructions:
Whip the instant pudding and the heavy cream using the mixer for 3 minutes.
gradually add the butter.

at this point, you can add any flavored ingredient to make the pudding to be flavoured.

The filling is ready for drizzling onto the macarons.

Caramel / Lotus spread & cheese

 

Ingredients:

2tbs of spread

1tbs cream cheese
1tbs ground coconut
Instructions:

Mix all ingredients together until well combined.

the filling is ready for drizzling onto the macarons.

Chocolate caramel ganache:

ingredients:
65 g confectioners sugar
1/2 teaspoon of lemon juice
40 ml water
150 ml heavy cream
200 g milk chocolate

instructions:
In a small saucepan cook the powdered sugar with the water and lemon juice, stir in a medium-high heat. stir until the sugar melts. cook it for 4 minutes untill it gets caramel color.
Remove from heat, add the heavy cream and stir.
return to the heat, add the chocolate til it turning smooth batter.  the batter should rest at aleast an hour in the refrigerator before filling the macarons.

Raspberry ganache:

ingredients:
80 g heavy cream
160 g white chocolate
50 g raspberry puree

instructions:
In a small saucepan cook the cream and the raspberry puree.
remove from the heat, add the white chocolate and stir till smooth batter.
the batter should rest at aleast an hour in the refrigerator before filling the macarons.

Cream cheese filling:

ingredients:
one pack of cream cheese – room temperature
2 cups of confectioners sugar
4 tablespoon of unsalted butter- room temperature
1 tablespoon of vanilla extract

instructions:
In electric mixer mix the cream cheese, sugar, butter and the vanilla extract till the mixture is smooth, it takes like 2-3 minutes.

Lemon cream filling:

ingredients:
3 tablespoon of unsalted butter- room temperature
120 g confectional sugar
2 teaspoons of heavy cream
1 tablespoon of lemon juice
1 teaspoon of lemon zest
1/2 teaspoon of vanilla extract
pinch of salt

instructions:
mix the butter till smooth, add the rest of the ingredients till smooth batter.

    I love your website – please keep it going, even if there are a lot of other macaron sites
    Do you have any recipes for pareve/nondairy chocolate buttercream filling?
    My husband can't eat dairy or gluten (which is why I started making macarons)
