When life gives you lemon – make macarons!
This post is going to be short, sweet and sour.
When life gives you lemons, use it for balancing the sweetness of the ganaches or fillings for the macarons cookies.
As I always write in my posts, the macarons shells are sweet, so we can't fill them with overly sweet filling.
Most of the filling and ganaches ingredients are sweet, so one of the solution for fighting the sweetness is adding few drops of lemon juice to the macarons filling.
So each time that you have a feeling that the filling is to sweet, add some lemon drops, but not too much, because you don't want your facial muscles to be contracted when you eat it… 🙂
So how did I do this yellow butter cream? In a food processor.. but electric mixer is better.
50 g of soft butter
140 g icing sugar
half teaspoon of lemon juice
half tea spoon of mango extract (optional).
How do I wash my "oily" food processor? I just add boiling water into the processor bowl, and then it's very easy to clean…
