Many times I've recieved private messages about hollow macarons. People tell me that the macarons that they're baking seems great on the outside but hollow inside.
Hollow macarons are macarons that have a big space between the top of the shell and the bottom. 1 or 2 millimeter space doesn't count as hollow macarons.
If the macaorns are hollow, that's mean that too much air is trapped inside the macaron batter, the air bubbles probably haven't released enough.
After we pipe macarons on the baking sheet we should tap the pan over smooth surface at least 3 times! this process release the trapped air inside the macarons batter. Do not give up this step.
In addition to that, You have to make sure that you fold the meringue with the powdered sugar and almonds evenly and correctly, uneven folding can cause hollow macarons as well.
Hollow macarons can be result of the heat in the oven. Differents results for different Ovens – If your macarons are hollow try to lower the heat in the oven. If the heat is too high the macarons are also turn out hollow.
Now I'll talk about chocolate chips and macarons.
I wanted to make cookie dough for macarons filling, I bought some chocolate chips and I was looking for a recipe over the web.
I read article about that raw cookie dough is not "healthy" so I gave up the idea of making macarons with raw cookie dough.
But now I have chocolate chips, what should I do with this?
I was curius to see what will happen if I bake macarons with this chocolate chips.
So here are the results:
I put some of the chocolate chips on top of the macarons, and put some on the baking sheet and then pipe the macaron batter on top of it.
Some of the chocolate chips that was on top of the macarons dropped down when baking, so that option is less recommended, even if it's looks good in the pictures.
This photo below shows chocolate chips which I put on the baking sheet before piping the macarons batter:
If the chocolate chips drops down after baking, you can put another chocolate chip on top of it, the new chocolate will stick to the melted chocolate beneath.
Anyway, the option of "trapped" chocolate chips is better, that way you get a "surprise" macaron 🙂
The filling of these macarons contain sugar free halva and dates spread, mixed with shredded coconut, great treat!
